Peanut Butter & Chocolate Cheese Cake

I actually made these chocolate cheese cake with a peanut butter center on Valentines day but I'm only getting round to posting about them now. Cheese cake is one of my favourite desserts but it can't be baked and has to be homemade. This is my favourite recipe that I got from one of my cooking lessons at school so I've probably had it for about 8 or 9 years. It's so simple but makes amazing cheese cake. You can use whatever biscuit you fancy for the base and then alter the topping accordingly. 

For this one I used an oreo base without the cream filling, a layer of peanut butter and then chocolate flavoured topping. I also used little ramekins as they look cute and are the perfect portion size.

Base:
1 packet of Oreo cookies, cream center removed (150g)
75g non salted butter

Peanut butter layer:
I totally guessed with this as I've never added it before. I melted some PB in a pan but you could use a microwave. I probably used 1 tablespoon for 3 ramekins. 

Topping:
200g cream cheese
100g icing sugar
125ml double cream
cocoa powder - again I just added it until it looked chocolate-y enough.

1 - Crush the biscuits
2 - melt the butter and add in crushed biscuits
3 - press biscuit mixture into a dish and put in the fridge
4 - melt peanut butter and spread a layer on top of the biscuit base and put back in the fridge
5 - mix together the cream cheese and icing sugar
6 - in a separate bowl, whisk the cream until whipped
7 - mix cream in with cream cheese and icing sugar
8 - carefully spread topping over the peanut butter
9 - refrigerate until serving.
